When you meet some baristas, they will let you know that they are the most important person in the room. When you talk to Brian Birdy, he makes you feel like you are the most important person in the room.
Birdy is co-owner of Full Circle, a coffee roasting operation based in Co. Monaghan. He first started learning about speciality coffee in Belgium, landing himself a job in the Antwerp’s Cafenation.
Returning to Ireland, he worked with 3FE and later Vice Coffee Inc, both key players in Ireland’s coffee scene. Having completely mastered his craft, he started his own enterprise in 2014. It was at this point he felt like his life had come ‘Full Circle’, and there was a whole new set of skills to learn. David Smyth, owner of Ebb and Flow is the other half of the duo.
The team roast only the freshest, specialty grade beans of the season, and supply to cafes across Dublin and Ireland. Full consultancy and in-depth barista training is provided for wholesale customers.
Dublin’s venues carrying FC include Shoe Lane on Tara St, and of course Ebb and Flow, in Clontarf. Outside of the capital, you’ll find them at Act One of Newbridge and Hugo’s in Slane, amongst others.
